Preparation of Baked Red Snapper

1. Rinse the fish and pat dry with paper towel. Season the fish inside and outside with salt and pepper. Place in a buttered baking dish. Combine the lemon juice and fish stock and pour over the fish. Dot with 2 tablespoons of butter and bake in a 400ยบ- oven for 30 minutes, or until the fish feels firm. Transfer the fish to a serving platter and keep warm.

2. Pour the liquid from the baking dish into a small saucepan. Stir in the cream and 2 tablespoons of butter; correct the seasoning and simmer over moderate heat for a few minutes. Spoon a little sauce over the fish and serve the rest in a sauce boat. Serve with potatoes or rice and green vegetables.
