1. Cook beets in a 375ยบ oven (this is a simple method that helps preserve the color). Wash beets and prick the skin. Leave the root and 1 inch of the stem. Wrap in aluminum foil leaving out the stem. Bake 1 1/2 hours.
2. Slice the beets and serve hot, seasoned with yogurt, salt and pepper.
