Ingredients for Serves 8-10.

Preparation of Lemon Foam

1. In a large bowl beat with an electric mixer the milk until it doubles the volume. Add gradually sugar, lemon zest and juice. Pour in individual or a large mold. Chill in the freezer until set.

2. Unmold and serve with fruits such as strawberries, raspberries, etc.
