1. Grate the corn. Set aside.
2. In a saucepan heat the oil and fry the garlic with the onion, salt and pepper. Add the pork and fry. Add the coriander. Stir and add the grated corn and chicken stock; mix well. Let the corn cook over slow heat for about 15 minutes, stiring constantly. Serve with rice.
