Ingredients for Potato Salad with Roquefort and Bacon

Ingredients for Serves 6-8.
  • 3 1/2 lbs. potatoes, unpeeled, cooked and quartered
  • 1/3 cup white wine
  • 1/3 cup chicken broth 1/3 cup parsley, chopped
  • 1/3 cup scallions, chopped
  • 1/21b. Roquefort cheese
    • For the dressing:

      • 2 tablespoons vinegar
      • - Salt and pepper
      • 1/2 cup olive oil
      • 1/4 lb. fried bacon, crumbled

      Preparation of Potato Salad with Roquefort and Bacon

      1. While the potatoes are still warm, add the wine and chicken broth. Mix well and add the parsley and scallions. Mix and let cool.

      2. Crumble the Roquefort and add to the salad. In a bowl mix the vinegar, salt, pepper and olive oil. Pour into the salad. Mix, cover and refrigerate for 1-2 hours. Serve sprinkled with bacon.
