Ingredients for Baked Eggs with Mushrooms

Ingredients for Serves 4-6.
  • 1 lb. mushrooms
  • 1/4 cup oil
  • 1 garlic clove, peeled
  • - Salt and pepper
  • 1 cup heavy cream
  • 1/2 lb. Swiss cheese, grated 6 eggs
  • - Dill to decorate

Preparation of Baked Eggs with Mushrooms

1. Wash and slice the mushrooms. In a heavy skillet heat the oil and garlic; discard garlic once browned. Add mushrooms, season with salt and pepper; cook in their own juice over low heat.

2. Grease a baking dish. Place mushrooms in the dish (or individual ramekins), cover with cream and sprinkle with cheese. Bake in a 350ยบ oven till the cheese melts.

3. Remove from the oven and break an egg over the mushrooms, making a cavity; garnish the yolk with dill sprigs. Bake 3 minutes more or until set.
