1. In a bowl mix the Parmesan cheese with the bread crumbs. In another bowl beat the egg with 1 tablespoon of water. Sprinkle chicken with salt and pepper; dredge in flour, shaking off excess. Dip the chicken in egg and then into the bread crumbs.
2. Ina large frying pan heat the oil and fry the chicken, turning once, until browned (10 minutes). Serve with lemon wedges.
